MBG’s Bliss Salad WIth Ginger Miso Dressing

"I'm a wee bit obsessed with this salad and have eaten it every day for a whole week without getting tired of it. I think that's because it makes me feel positively blissful when I eat it. It's loaded with superfoods and protein, and the Ginger Miso Dressing is the perfect touch to bring a little brightness to the salad.  Get ready to get blissed out, because I am pretty sure this will become your new favorite go-to salad." - MBG

Ingredients for the salad:

  • 1 handful fresh arugula

  • 1 handful fresh spinach

  • 1 handful shredded Lacinato kale

  • ½ cup thinly sliced beets (raw or roasted)

  • ½ cup shredded carrots

  • ¼ cup thinly sliced red onion

  • ¼ cup cooked quinoa (skip if we have weaned off pseudo grains)

  • ¼ cup cooked lentils

  • 1 Tbsp dried cranberries - if you use these, be sure not to get the ones sweetened with sugar, but find the apple juice sweetened ones instead, or use raisins, or skip totally

  • 1 Tbsp goji berries

  • 1 Tbsp hemp seeds

  • 1 Tbsp walnuts

Ingredients for the dressing:

  • 1/4 cup extra virgin olive oil

  • 1/4 cup water

  • 1/4 cup white or red miso paste

  • Dash of raw honey (to taste) - you can leave this out

  • 2 tbsp chopped scallion

  • 1 tbsp ginger, peeled and minced

  • Juice from one lemon

  • A drizzle of sesame oil

How to:

Add all dressing ingredients to a blender, and blend until creamy and smooth. You'll have plenty of dressing for this recipe and additional salads.

Toss all the salad ingredients together in a bowl and drizzle with Ginger Miso Dressing. Give it one more good toss, then sit down and enjoy!
