Jennifer Cornbleet’s Favorite Garden Salad With Tahini
JC says: "This dressing can actually make a salad so scrumptious you’ll want to devour it. As you may know, tahini is a paste made from sesame seeds. You could replace the tahini with almond or cashew butter for an equally delicious dressing. The chopped cashews or almonds add a nice crunch and even more hardiness."
Garden Salad with Tahini Dressing
4 tablespoons raw tahini
4 tablespoons water
2tablespoons fresh lemon juice
1 small clove garlic, crushed or finely minced
1/4 teaspoon salt
6 cups chopped or torn lettuce (romaine, red, green leaf or arugula/spinach)
1cup thinly sliced red or green cabbage (optional)
1 cup grated carrots
1/2 cucumber, sliced into half-moons
1 cup chopped fresh parsley or cilantro (optional)
1/4 cup cashews or soaked/peeled almonds, chopped (optional)
How to:
Put the tahini, water, lemon juice, garlic, and salt in a large bowl and whisk to combine.
Add the remaining ingredients and toss to combine.
Serve immediately.
Variation: Replace the tahini with raw almond or cashew butter.
