“Its Thyme To Pick Up the Beet” Smoothie

ingredients - in the blender:

Filtered water

Beets* (peeled & cut small)

Frozen blueberries

Pomegranate seeds (you can get them frozen when not in season)!

Fresh spinach 

Thyme (de-stemmed) - use enough to really notice the flavour,

Avocado

Fresh squeezed lemon juice

Pinch o' Himalayan pink salt

Rose hips

Fennel seeds 

(Cacao nibs for topping)


(Make sure Thyme is a herb you like... it's very prominent!)

I have not listed amounts because I didn’t measure when I made this, just “some” of each - maybe a medium sized beet, about a cup of wild blueberries, half an avocado, a cup of spinach, a handful of pomegranate seeds… dabble with it to make it your own. 

Blend ‘til smooth, top with cacao nibs, yum.

* peeling & cutting beets will make you have red hands so sometimes (when I remember) I’ll prepare a whole bunch of them at once and freeze them to save red hands next time. They freeze very well.
