Hot Sauce

We love making our own hot sauce. It's easy, fun and tasty! (We also love designing the labels).

Homemade hot sauce is a great way to include some apple cider vinegar in your meal (to aid digestion) and is so much better than the store bought stuff.  It also makes a great gift.

Warning, the air does get very spicy and we have been known to cough quite a bit from the "fumes"! So it’s good to ventilate your space by opening windows/doors if possible.  (You could also wear a mask).  It can also be quite spicy for your fingers, so be careful where else you touch after handling hot peppers. WASH YOUR HANDS before touching your eye, be careful of open cuts etc.

Ingredients:

Dried peppers of choice (I last used 27 large dry chillies, use your favorite kind, we like chipotle)

garlic, finely chopped (I used 4 cloves, peeled)

fresh ginger, peeled if not organic + grated (one knub about a thumb size)

Apple Cider Vinegar (one and three quarters cup)

Salt (about a teaspoon)

glass bottles (save your old sauce bottles)

blender, pan, funnel (maybe a sieve if you like to strain it)

collage materials to decorate your bottles

(you can get creative with the ingredients you add, maybe pineapple, or mango, or fresh peppers...etc)

 How to:

Put the dry peppers in a pan on low heat and "toast" them for about a minute or two until you release the aromatics, stirring it as you go.

Add the rest of the ingredients and top with ACV.

Bring to a boil over high heat. Once boiled, reduce to a gentle simmer for about a minute or two.

Remove from the heat and let it fully cool.

Once cooled, put in the blender on high for 3-4 minutes.

Using your funnel, pour into bottles (strain if you want it to be thin like tabasco but look at the texture first and see if you prefer to leave it unstrained).... 

Refrigerate for 2-3 days before using it - to allow the flavors to steep.

Decorate your bottles, make up fun names for it, have fun.

It will keep in the fridge for about 6 months.
