Green Goddess Dressing

There are many ways to make this, and in my research I have come across a lot of different recipes. So of course, as usual, feel free to play with this recipe and make it your own.

Ingredients ~

one large clove of garlic

olive oil

one ripe avocado

3 leaves of kale (or really any leafy green) - I leave the stalks on, it will be blended, but it’s up to you if you de-stalk or not

juice of one lemon or lime (start with half, and taste to see if you need more)

salt (to taste)

chili flakes (optional, to taste)

fresh green herbs (optional)

I sometimes add a tablespoon or two of plain grass fed keifer to this recipe but while cleansing will add plain coconut yogurt instead

How to ~

  • Chop your garlic clove before lightly sautéing in olive oil - this takes away the sharp raw flavor of the garlic (don’t over cook it, just take the edge of)

  • Add all of the ingredients to the blender and blend (include the olive oil you sautéed the garlic)

  • Taste it and see what you think it needs for your pallet - perhaps a little extra citrus or salt or chili flakes?

  • Serve with red lentil dosa, or pour over a green salad* or cooked greens*, have as a dip, or to accompany a curry… it’s pretty versatile and delicious.

    *yes even with greens in the ingredients, it still works great as a salad dressing.

  • in my experience it stores well in a lidded glass jar for 2-3 days.
