Five Minute Curry Miso Soup
Quick, easy, tasty, healthy..... good for breakfast, lunch or dinner. The following recipe is a meal for one, just double it up if you are sharing. It's also a perfect meal if you are feeling run down, or have a scratchy throat or you just need a boost of energy. Miso is rich in probiotics & has anti-aging properties. It's immune boosting and is beneficial for your digestive system.
Ingredients:
Filtered Tap Water, enough for one generous bowl of soup
One carrot, thinly sliced
1-2 garlic cloves
Curry Powder (get a high quality organic powder, without salt)
Black Pepper
Smoked Paprika
Two crimini mushrooms (or mushrooms of choice/region)
(optional) firm organic tofu
Two large leaves of collard greens or kale
One heaped tablespoon of Organic* Miso Paste (get a flavourful one, like red miso, or black bean miso)
About a half teaspoon of virgin coconut oil (optional, good for a cold day)
Cayenne Pepper (optional, to your taste)
And a nice ceramic bowl to serve it in...
* It’s very important that you buy Organic Miso Paste (and tofu), because otherwise it is likely genetically modified (in the US anyway).
(Optional extras - really you can put into this whatever you wish, sometimes I pop in a little seaweed, or tofu, or some thinly sliced sweet potato, or freshly grated ginger root, or spring onions/leek, and I will often sprinkle a few goji berries in there too....)
How to:
Take a lovely deep breath.
In a small saucepan fill with enough filtered water to make a generous bowl of soup, and bring to boil.
Slice your carrot nice and thinly, and pop that in.
Finely chop your garlic and add that to the pot.
Add a generous pinch each of curry powder & smoked paprika and a few cracks of black pepper.
Cook for a couple of minutes.
Enjoy a glass of filtered tap water for yourself while the carrots cook a little bit. Breathe and smile.
Finely slice your mushrooms and pop those in the water with the spices and carrot.
Finely chop your leafy greens and pop those in.
(optional, add some firm tofu)
Simmer for about a minute or two (covered) - you want them to keep their vibrant green and not get overcooked. If you are using spinach, please add the spinach then just turn off the heat straight away.
In a favorite ceramic bowl, add a generous heaped tablespoon of flavourful miso paste.
Ladle a small amount of the broth on top of the miso and stir to melt the paste.
Top the bowl up with the rest of your soup.
Optional, add a half teaspoon of coconut oil
If you like spicy, add a small pinch of cayenne pepper and stir in.
If you have some, throw in a few goji berries, to eat toward the end of your soup once they have absorbed the broth and expanded.
Sit down with your bowl of soup, smile, inhale, relax your shoulders... taste, sip, keep smiling, breathe well, and enjoy your healthy lunch.
