Crucifer Detox Salad
Cruciferous veggies are absolutely crucial for a good detox. This salad includes several kinds and tastes delicious. It’s very adaptable, so play around with it to suit your taste buds and what you can find at the grocery store.
Ingredients:
1 small head cauliflower* cut into small pieces
1 small head red cabbage cut into small pieces
10-15 Brussels sprouts shaved or sliced in food processor
5-6 large kale leaves, deveined, and cut into small pieces
(optional, add some grated carrot)
1/4 cup pomegranate seeds (you can get these frozen, allow to defrost)
¼ a cup of hemp seeds (or a combo of hemp, sesame, sunflower)
½ a cup fresh-pressed virgin olive oil
Juice of 1 lemon
salt and fresh ground pepper to taste
*optional - roast your cauliflower ahead of time to add to this salad, I think that adds a nice flavor.
How to:
Optional, in advance roast your cauliflower. When that is cooling -
Chop your other cruciferous veggies and set aside for 10 minutes.
Grate your carrot(s), if using.
Then mix all your cruciferous veggies, (carrot) and dried fruit together, really well.
Massage the olive oil and lemon juice into the veggies by hand, to thoroughly coat and soften them.
Let sit for a few minutes for the olive oil & lemon to marinate the veggies.
Feel free to use more or less of anything to suit your taste. It’s a very adaptable recipe.
