Buckwheat Galettes / Crepes (GF)
Mike and I LOVE galettes and were first inspired by a wonderful French guy selling them in London’s Broadway Market. And then we started making our own, with pure buckwheat flour and they're so good. This recipe comes our way via my sister Lottie - thanks lovely.
Galettes are a buckwheat version of crepes - they’re simple to make, are gluten free and are very versatile. We like ours with sauteéd kale & mushrooms or really any sauteéd veggies.
They work well as dessert with dark chocolate too (post-cleanse)
Ingredients:
2 and a quarter cup of pure (100%) buckwheat flour
3 cups of filtered water
1 pasture raised egg (or use flax seed/chia seed to make a vegan version)
pinch of salt
+ blender + crepe pan (with a non-stick you won't need to grease the pan)
How to:
Put all your ingredients in the blender and blend ‘til smooth.
Set aside for 2+ hours (the hardest part)
Heat your crepe pan
Using a ladle, pour a little batter onto your pan and spread evenly.
Resist flipping too soon.
Brown on both sides.
Remove from the pan and fill with whatever you desire.(This batch makes a lot, so put left overs in the fridge. Blend again, and make a fresh batch when you want some more (vs making a bunch of galettes to eat later)
