Big Smiles “Bread, Not Bread - A Seedy No-Grain Loaf”

I came to this recipe via Sally Smiles, one of my best friends in the UK who makes this regularly. It freezes very well (for toast) and is just SO good. (It’s also much easier than regular baking).

Ingredients:

  • 1 cup of sunflower seeds

  • ½ cup of flax seeds*

  • ½ cup of hazelnuts or BLANCHED almonds

  • 1½ cups of rolled oats (or replace with other seeds/nuts of choice)

  • 2 TBSs chia seeds*

  • 4 TBS psyllium husk seeds (or 3TBS if using the powder)*

  • 1 tsp fine grain sea salt (add ½ tsp if using coarse salt)

  • 1 TBS maple syrup or honey

  • 3 TBS melted coconut oil or olive oil

  • 1 ½ cups (350ml) filtered warm/hot water (you might need a little extra if it feels very dry)

    *you definitely need these ingredients, they are your binding agents

  • You can definitely play around with this. I usually add hemp seeds and a little less oats.

How to:

  • In a flexible, silicon loaf pan, combine all the dry ingredients, stirring well. (I actually make it in a bowl and move to the loafpan)

  • Whisk maple syrup, oil and warm water together in a measuring cup.

  • Add this to the dry ingredients and mix everything really well until everything is completely soaked and the dough becomes nice and thick.

  • (If it’s too thick, add a little water until it becomes more manageable)

  • (Add to the silicone loaf pan)

  • Smooth out the top with the back of a tablespoon.

  • Let it sit on the counter top at room temp for at least 2+ hours (or all day, or overnight - away from any hungry mice!)

  • To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it.

  • Preheat your oven to 350F or 175C.

  • Place the loaf in the middle of the oven and bake for 20 minutes.

  • Remove bread from loaf plan and place upside down on the rack and bake for another 30-40 minutes.

  • The bread (not bread) is done when you can hear a hollow sound when you tap it.

  • Let it cool down completely before cutting into it (not easy to wait, but important).

  • Store in a tightly sealed container in the fridge for up to 5 days. 

  • It freezes well too, but remember to slice it ahead of time for quick & easy toast.
