Anna Hancock’s Cinnamon Breakfast Pears
these make a great dessert (to breakfast or any meal). I highly recommend eating something protein rich to break your fast. Such as a boiled egg (or two), a tofu/egg scramble, left over protein from dinner… paired with some kind of fermented veggies.
Ingredients:
1 ripe pear
coconut oi
cinnamon
unsweetened coconut flakes
pecan nuts
frozen raspberries
How to:
Peel and slice the pear (“I tried a version with the skin on and it didn't really work - the skins were tough and chewy and got in the way of my enjoyment of the soft caramelized flesh” - Anna)
Place in a saute-pan with some coconut oil, sprinkle some cinnamon and saute.
Cook for as long as it takes for the outside to color, but not so long that they turn to mush. (They should look a bit like a potato wedge/french fry)
Place pears in a bowl.
Lightly saute the nuts and coconut flakes in the oil that remains in the pan.
Serving suggestion:
Place cooked pears, nuts and coconut flakes in a bowl with pureed raspberries*
